Note-taking/life organising App: Best Apple app?

hi all, i really like creating notes on my iPod Touch and Mac Mini. i know of evernote and simplenote, but i don't trust these companies with my personal information. however, i do trust Apple.

i wanted to know what Apple App i can use to store notes and help organise my life with just something simple like the 'Notes App.' what do you guys recommend?

with the 'Notes App' from Apple, i saw someone mention in another thread that they lost a bunch of notes when they synced it and somehow their notes were overwritten by an older set of Notes. does anyone know how this could happen? that would really suck if it happened to me. it happened once, but it was my fault.

i also want to be able to access it from a Windows machine as well.
